Amish Chicken Casserole

This makes a basic chicken casserole. It actually taste like chicken pot pie. I’m sure it went over as a great Amish main course.

Amish Chicken Casserole

Ingredients

1/4 cup butter

1/4 cup all-purpose flour

2 cups chicken broth

1 tsp. dried thyme or 1 Tbsp. fresh thyme, finely chopped

1 tsp. kosher salt

1 tsp. ground black pepper

1 cup milk

1/2 cup Parmesan cheese

8 oz. rotini pasta noodles, cooked (I like to use the tri-colored ones)

2 cups diced cooked chicken

Directions

Preheat oven to 350 degrees F. Spray a 2 quart casserole dish with non-stick cooking spray. Melt the butter in large saucepan. Add flour and whisk together for 1 min. Add broth, whisking and allow to come to a boil. Next, add thyme, salt and pepper(I always use my favorite cajun seasoning, Tony Chachere’s) as you whisk. Bring mixture to a boil and continue to whisk occasionally. Lower the heat and add milk and cheese. Cook for 3-5 min. until sauce is thickened and milk is warmed through. Pour sauce over cooked pasta and add chicken to the mixture. Stir and pour into the casserole pan. Cover and bake for 20-25 minutes.

Amish Yumasetti

This is just what the name says Yum. What’s good about this dish is that it can be altered to your taste. My daughter suggested adding a package of frozen corn. Hubby suggested adding a couple of cans of rotel tomatoes. Definitely going to try that. Great Amish main course. Hope you enjoy!

Ingredients

12 oz package pasta (I use tri-color)

2 lbs. ground beef ( could use ground turkey)

1 onion, chopped

2 cups frozen peas

20 oz cream of mushroom (2 cans)

20 oz. cream of chicken (2 cans)

1 cup sour cream

2 cups bread crumbs

1/2 cup butter

Directions

Cook noodles. Brown the ground beef (I add seasoning here. That would be Tony Chachere’s) with the onion. Drain fat off the meat. In a large bowl, combine the noodles, beef, peas, soups and sour cream. Next, pour mixture into a greased 9×13 (You may want to use a bigger one. This makes a lot.) baking dish. In a small bowl, toss the bread crumbs with the melted butter. Lastly, sprinkle the bread crumbs on top of the casserole. The pan will be very full. Cover the casserole with foil and bake at 350 degrees for 25 min. Uncover and bake an additional 15-20 min. or until a light brown top.
